Puttanesca Tartine


  • l red onion                            

  • l/2 cup castelvetrano olives - pitted                            

  • l/2 cup    kalamata olives - pitted                            

  • l red pepper                            

  • l/4 teaspoon chile flake                            

  • l/4 teaspoon black pepper                            

  • 2 tablespoons olive oil                                                    

Directions: Slice the onion thinly. Chop the olives, they can be pretty chunky. Combine with the onions & remaining ingredients in a bowl, mix to combine.                                                                     

To Assemble 

  • 4 slices olive bread, sliced 3/4 inch thick                            

  • l/4 cup parsley leaves                            

  • l tin nice chunk tuna        

  • salt - as needed 

  • olive oil - as needed                                 

Directions: Preheat an oven to 375F. Drizzle olive oil on the olive bread. Top generously with the puttanesca topping. Bake at 375 for 15 minutes or until the bread is toasted. Place nice chunks of tuna on each tartine, then top with the parsley leaves and another drizzle of nice olive oil.
